Salts of lactic acid (E270), used to preserve, hold moisture and firm texture. Despite the name, the lactic acid behind them is made by fermenting plant sugars; even a dairy route would be permissible.
E325 — Sodium lactate
The sodium salt of lactic acid, used to preserve and hold moisture.

E326 — Potassium lactate
A lactate salt used to extend shelf life.
Why it raises no question. Same fermentation route as E325, with potassium.
Where you meet it. Packaged meat, poultry, ready meals.
E327 — Calcium lactate
A lactate that also firms fruit and vegetables.
Why it raises no question. Fermented plant sugars plus mineral calcium.
Where you meet it. Tinned fruit, cheese, supplements, plant drinks.
